The Hydnum repandum possesses a hydrophobic surface on its cap, while its "teeth" or spines are highly absorbent. By applying a dry-heat sear followed by an herb-oil crusting, we encapsulate the internal moisture while allowing the spines to wick up the garlic-infused lipids.

  • 60ml Extra Virgin Olive Oil.
  • 4 cloves Garlic, mandolin sliced.
  • 30g Fresh Breadcrumbs.
  • 1 tbsp Herbes de Provence.
  • 1 bunch Parsley, chopped.
  • Lemon Zest of one lemon.

Technique

1. Aromatic Sauté: Fry garlic chips in olive oil until golden; set aside.

2. Sear: Sear mushrooms in the same oil, cap-side down for 5 minutes, then flip for 3 minutes.

3. Crusting: Sprinkle breadcrumbs, herbs, and zest over mushrooms to allow the spines to absorb the oil.

4. The Finish: Toss in parsley and garlic chips for a final high-heat flip and serve immediately.
