Dried Chanterelle & Potato Stew
Rustic One-Pot Comfort: A slow-simmered tribute to the golden treasures of the forest.
When the mountain air turns crisp, the kitchen calls for the golden glow of the Chanterelle (Cantharellus cibarius)—known in Bulgaria as Пачи крак (Pachi krak). This stew is the definition of "slow food" made simple. Unlike fresh chanterelles, which are delicate and high in water, dried chanterelles possess a concentrated, almost leathery depth that stands up beautifully to long simmering. Paired with humble potatoes, this one-pot meal transforms into a thick, soul-warming elixir. It's a dish that tastes of damp earth, sun-drenched moss, and the savory herbs of a traditional village garden.

The Golden Chanterelle: A Sensory Profile
The Chanterelle is famous for its apricot-like aroma and a flavor that starts sweet and finishes with a subtle, peppery bite. In a stew, these mushrooms don't melt away; they retain a firm, meaty texture that provides a satisfying contrast to creamy potatoes. The sensory experience is a duet of fruit-forward aromatics and deep, savory umami.
Our wild-harvested Chanterelles are gathered from moss-covered Balkan slopes where they grow in symbiosis with ancient pines. This 100% wild origin is vital for their high Vitamin C and Potassium content. Because they are foraged far from industrial pollution, they are a clean superfood. We air-dry our harvest to preserve the polysaccharides that support a healthy immune system, ensuring that your comfort meal is as functional as it is flavorful.
🥘 The Master Recipe: Hearty Chanterelle & Potato Stew
- Dried Chanterelles — 1.5 oz (rehydrated).
- 1/2 tsp Black Trumpet powder (to deepen the golden broth).
- 4 large Potatoes, peeled and cut into chunks.
- 1 Onion | 2 cloves Garlic | 1 Red Bell Pepper, diced.
- 3 tbsp Extra Virgin Olive Oil | 1 tsp Smoked Paprika.
- Fresh Thyme and a leaf of Bay.
- 1 Liter Vegetable Broth (plus rehydration liquid).
- Sea salt and coarse Black Pepper.
The Execution:
- The Flavor Base: Soak the dried chanterelles in warm water for 20 minutes. Pro Technique: Strain and keep the liquid! It holds the apricot-scented oils that would otherwise be lost.
- The Sauté: In a heavy pot, sauté the onion, pepper, and garlic in olive oil until soft. Add the rehydrated chanterelles and the Black Trumpet powder. Sauté for 5 minutes—the chanterelles need to hit the hot oil to release their peppery notes.
- The Aromatics: Stir in the smoked paprika and thyme. Let the spices toast for 30 seconds before adding the potato chunks.
- The Simmer: Pour in the broth and the reserved mushroom liquid. Bring to a boil, then reduce to a simmer. Cover and cook for 25-30 minutes.
- The Secret Finish: Once the potatoes are tender, take a spoon and mash a few chunks against the side of the pot. Stir them back in—this creates a thick, velvety stew base without needing flour or cream.
The Umami Secret: Chanterelles are naturally bright and acidic. By adding a pinch of Black Trumpet powder, you anchor those high notes with a deep, earthy foundation. The Trumpet powder doesn't overpower the Chanterelles; it simply makes the golden broth taste "fuller" and more complex.
🍷 Serving Tips & Pairings
This stew is best served in wide bowls with a generous dollop of Greek yogurt or sour cream to balance the peppery finish. For a wine pairing, a crisp Pinot Grigio or a Chardonnay mirrors the mushroom's fruitiness. For a non-alcoholic option, a cold glass of tomato juice with lemon provides a sharp, savory contrast.
📊 Nutritional Powerhouse
Wild Chanterelles are one of the richest plant sources of Vitamin D and Iron. Because our harvest is 100% wild, these minerals are naturally bioavailable. This stew is a low-fat, high-fiber meal that supports bone health and provides a steady release of energy, making it the perfect restorative dinner after a long day.
